Today’s Banana Friday treat is Frozen Banana Pops – an easy, delicious treat that is perfect for the hot summer months!
Welcome to the second recipe in the Banana Friday series! My mom made Frozen Banana Pops for all of the grandchildren on the Fourth of July and I was inspired to try them myself. They’re super simple, yet totally delicious. My kiddos LOVE these, and they’re great for a healthy treat on hot summer days.
Melting Chocolate (approximately 1.75-2 cups)
Toppings (sprinkles, peanuts, etc.)
Cookie sheet covered with wax paper
Cut bananas in half, insert popsicle stick and place on cookie sheet. Freeze for at least 2 hours.
Prepare melting chocolate + 2 tbs of coconut oil by heating in microwave at 15 sec intervals and stir. Repeat until melted. (Note: You’ll want to melt it in a tall glass so that there is enough room to dip the banana.)
Remove bananas from freezer and dip individually into chocolate. Coat with toppings immediately as the chocolate will harden quickly, so be sure to do just one banana at a time and then repeat with the next banana. We found the best way to do this was to hand-sprinkle the toppings onto the banana over top of a plate to catch the toppings that fall off.
Here’s our resident leftover toppings eater. I’d say she enjoyed this as much as a frozen banana pop 😉
Return the bananas to the freezer for another hour or so or eat immediately (depending how frozen they were before being dipped).
